About this calculator
Winemakers and vineyard owners planning a harvest need a fast answer to 'how many cases will this make,' and the rule-of-thumb answer of 60 gallons per ton skips over the losses that happen between crush and bottling. This calculator uses your expected gallons per ton (which varies with grape variety, press yield, and whether it's free-run or pressed juice), subtracts your expected process loss from racking and filtration, and converts the result into finished bottles and cases. It's useful both for pre-harvest production planning and for reconciling actual yield against a harvest contract, since custom crush facilities and cooperatives often bill or pay based on tons delivered while the winery cares about bottles produced.

FAQ
Why does gallons per ton vary?
Free-run juice yields less per ton than juice that includes press fractions, and grape variety, ripeness, and berry size all shift the number. A common planning range is 150-170 gallons per ton for red varieties with moderate pressing, and up to 180-190 for some white varieties pressed harder.
How much should I budget for process loss?
A red wine aged in barrel with two or three rackings plus final filtration commonly loses 10-15% of volume from crush to bottle. A quick-turn white with minimal handling can lose as little as 5-8%. Sparkling wine made by traditional method loses more due to disgorgement.
Can I use this to check a custom crush invoice?
Yes. If your custom crush facility reports finished gallons or bottles that are meaningfully below what this calculator projects from your delivered tonnage, ask for a loss breakdown by stage (press, racking, filtration) to see where the gap is before assuming it's normal shrinkage.
