FAQ
What should I include as waste?
Spoiled or expired inventory, trim loss beyond the recipe's expected yield, prep mistakes that get discarded or remade, and manager comps for service issues. Do not include planned staff meals if those are tracked as a separate line — mixing them inflates the number and hides the real problem.
What's a realistic target?
4-6% of total food cost is standard for a well-managed kitchen. High-waste categories like fresh seafood, produce, and dairy naturally run higher than shelf-stable dry goods, so look at waste by category, not just the blended total.
How do I start tracking this if I never have?
Keep a simple waste log at the trash and comp point for two weeks — item, quantity, reason, estimated cost. Two weeks of real data is usually enough to spot the one or two categories driving most of the loss.
Does over-portioning count as waste?
