How does the oven temperature converter (°f, °c, gas mark) work?
Fan (convection) ovens run hotter than the dial suggests, so recipes written for conventional ovens need roughly a 20 °C / 25 °F reduction to avoid over-browning. The underlying maths is: °C = (°F − 32) × 5/9; fan setting = conventional °C − 20; gas mark ≈ (°F − 250) ÷ 25 + 1
