About this calculator
Every cafe overfills steam pitchers and dumps the excess, and every barista occasionally over-foams and pours milk down the drain. This calculator turns your daily milk waste estimate into a monthly dollar figure and compares dairy against oat, almond, or soy costs, which typically run 2-4x higher per ounce than dairy. It also computes the cost impact of switching your default milk or adding an alt-milk upcharge. Shops that don't measure this assume milk is a rounding error, but a location doing 300 milk-based drinks a day with even 0.5oz of average waste per drink is dumping several gallons a week, and that waste compounds faster with oat milk given its higher per-ounce cost. Use this alongside your POS modifier data to see whether your alt-milk upcharge actually covers the real cost delta.

FAQ
What's a realistic milk waste figure per drink?
Well-trained baristas using a thermometer and proper pitcher sizing waste under 0.3oz per drink. Shops without training or using oversized pitchers for small drinks routinely waste 0.5-1oz per drink from overfilling and excess foam that gets scraped off and discarded.
Is my oat milk upcharge covering the real cost?
Run the numbers here. Oat milk commonly costs $8-11 per gallon versus $3.50-4.50 for dairy, a gap of roughly 4-6 cents per ounce. An 8oz pour difference is 30-50 cents, so a standard 75 cent upcharge usually covers it with room for the extra handling, but cheaper upcharges of 50 cents often don't at current oat milk pricing.
How do I actually reduce steaming waste?
Match pitcher size to drink size (12oz pitcher for a 12oz drink, not a 20oz pitcher), train staff to steam to volume not habit, and use frothing thermometers or auto-steam wands that stop at a set temperature. These changes typically cut waste by half within a few weeks.
