Costing a BEO accurately means adding food and beverage cost per head, service staff labor for the room, room/AV rental allocation, and any linen, rental, or decor costs, then comparing to the contracted per-head or flat price. What's commonly left off a BEO cost estimate?

How do minimum guarantees protect margin?
