About this calculator

Scaling a recipe from 24 cookies to 300 for a wholesale order isn't just multiplication if you round ingredient weights or switch pan sizes, and it isn't cost-neutral either. This calculator takes your current recipe yield and total ingredient cost, and scales both to a target yield, so you get the exact scaling factor along with the new total cost and cost per unit at the new scale. It's built for general bakery items (cookies, cakes, muffins, bars) rather than baker's-percentage bread formulas, which behave differently because hydration and salt ratios need separate handling. Use this when a wholesale account asks for 10x your home-batch recipe and you need both the ingredient multiplier and a fast gut-check on whether the per-unit economics hold up at scale, since fixed costs like mixer time don't always scale linearly.

FormulaScale factor = target yield ÷ current yield. New ingredient cost = current cost × scale factor. New cost/unit = new cost ÷ target yield.

FAQ

Why does cost per unit change when I scale up?

Fixed labor like mixer setup and oven preheat doesn't grow with batch size, so it gets spread across more units and cost per unit typically drops as you scale up. This calculator separates fixed minutes from per-unit minutes so you can see that effect instead of assuming linear scaling.

Does this work for bread dough recipes?

It works for total cost scaling, but bread formulas built on baker's percentages (flour as 100%, everything else relative to it) should use a baker's-percentage-specific tool since hydration, salt, and yeast ratios need to stay fixed as percentages rather than scaling every ingredient by the same multiplier blindly, especially with commercial yeast timing.

What if my target batch needs more pans or oven space than I have?

This tool doesn't account for oven capacity constraints. If scaling 10x means you need three bake cycles instead of one, add the extra oven time to your variable labor minutes per unit so the labor cost reflects the real production schedule, not just mixing time.
