This includes spoilage from over-ordering perishables, trim loss beyond expected yield, kitchen errors that get remade, and manager comps for service recovery. This calculator takes your total waste dollar value logged during a period and your total food purchases for that period, and returns the percentage along with an annualized dollar impact, which tends to get attention from ownership faster than a percentage does. Reducing waste from 8% to 5% on a restaurant buying $300,000 in food annually saves $9,000 a year with zero menu or price changes — that's often easier money than trying to win new customers.",
